Crawfish, also known as mudbugs, are a food that is favored by many in the South. This limited-time food is the best while it is in season, starting late January or early February, depending on the season, and ending in late June or early July.
Crawfish are usually sold at seafood markets, but some other places also sell them, such as H-E-B, roadside stands, restaurants, and food trucks. Each place has different prices, but most are set at market price, or around $9.99. Some places have different flavors for you to choose from, and a fan favorite is garlic parmesan, the crawfish smothered in hot butter and garlic parmesan sauce.
“My favorite sauce to get is garlic parmesan, but I would usually get it on the side if I was getting it,” junior, Paxtyn Harmon said.
This dish is usually served with sides, anything from potatoes and corn to ravioli or eggs. There are plenty of options to choose from, and each restaurant has something different. There are mushrooms, sausage, rice, potato salad, and anything you can imagine to have as a side for your boil to soak up the rich, savory flavor.
“The best way to eat a crawfish boil is with potatoes, sausage, and corn,” senior Grace Boren said.
One way some people gather to show their love for crawfish is at crawfish festivals. There is a crawfish festival this spring in Montgomery called the Mudbugs Festival on March 28, 2026, where they feature 20,000 lbs of crawfish, live music, and a cornhole tournament for all to enjoy. “I am for sure making that drive, I love crawfish so much,” junior Kenzie Pogar added.
